Fresh pasta is easier to cook than dry pasta, experts say. This meal is recommended for weekday dinners. Eggs are said to be the basis for making creamy sauces.
- 1.5 tablespoons extra virgin olive oil
- ½ cup panko breadcrumbs, preferably whole wheat
- 1 small clove garlic, chopped
- 8 tablespoons grated Parmesan cheese, divided
- 3 tablespoons chopped fresh parsley
- 3 large egg yolks
- 1 large egg
- ½ teaspoon pepper
- ¼ teaspoon salt
- 1 (9-ounce) package fresh pasta or linguine
- 8 cups baby spinach
- 1 cup peas (fresh or frozen)
- Bring 10 cups of water to a boil in a large pot over high heat.
- Meanwhile, heat the oil in a large saucepan over medium heat. Add breadcrumbs and garlic; cook until two minutes and then toast. Put it in a small bowl and mix with 2 tablespoons of Parmesan and parsley. Set aside.
- Combine the existing six tablespoons of Parmesan, egg yolks, eggs, pepper and salt in a medium bowl.
- Cook pasta in boiling water and move for a minute. Put spinach and peas. Cook the pasta for another minute until it’s chewy. Drain it and place in a large bowl. Put 1/4 cup of water.
- Little by little, drip the reserved cooking water into the egg mixture. Slowly, using tongs, add the mixture to the pasta. Add the crumb mixture to pasta for a delicious meal.
